L\u2019interdit de mise en conserve et de salage d\u2019aliments"},"content":{"rendered":"<p>Nos sages ont interdit de mettre en conserve des cornichons, des olives et d\u2019autres produits du m\u00eame genre, dans de l\u2019eau sal\u00e9e ou du vinaigre, car la mise en conserve ressemble \u00e0 la cuisson. De m\u00eame, les sages interdisent de saler des aliments quand le salage entra\u00eene chez eux un changement de nature\u00a0; c\u2019est le cas par exemple du radis, de l\u2019oignon, de l\u2019ail, du navet et des concombres. En effet, par l\u2019effet du sel, ces l\u00e9gumes suintent, leur amertume se dissipe, ils se font plus tendres ou plus durs, et plus savoureux. Or l\u2019acte ressemble \u00e0 la <em>m\u00e9lakha<\/em> de tanner le cuir (<em>me\u2019abed<\/em>, cf. chapitre 18 \u00a7 6), et l\u2019effet sur l\u2019aliment ressemble \u00e0 celui de la cuisson (<em>Choul\u2019han \u2018Aroukh<\/em> 321, 2-6, <em>Michna Beroura<\/em> 15).<\/p>\n<p>Il est permis de tremper un morceau dans du sel avant de le manger car, de cette fa\u00e7on, <em>on ne para\u00eet pas<\/em> avoir pour intention de faire une salaison de cet aliment. Selon de nombreux avis, il est m\u00eame permis de saler plusieurs morceaux et de les placer devant soi afin de les manger imm\u00e9diatement, l\u2019un apr\u00e8s l\u2019autre (<em>Choul\u2019han \u2018Aroukh<\/em> 321, 4)\u00a0; mais la coutume est d\u2019\u00eatre rigoureux et de manger chaque morceau imm\u00e9diatement apr\u00e8s l\u2019avoir tremp\u00e9 dans le sel car, si on laissait en attente un morceau tremp\u00e9 dans le sel tout en trempant d\u2019autres morceaux, on para\u00eetrait, le temps de l\u2019op\u00e9ration, faire une salaison (<em>Michna Beroura<\/em> 321, 20, <em>Kaf Ha\u2019ha\u00efm<\/em> 26).<\/p>\n<p>Quand on ajoute de l\u2019huile, il est permis de saler plusieurs morceaux ensemble, car l\u2019huile att\u00e9nue l\u2019effet du sel, et l\u2019acte ne s\u2019apparente pas \u00e0 la pr\u00e9paration de conserves mais \u00e0 l\u2019assaisonnement de la nourriture (<em>Michna Beroura<\/em> 321, 14). De m\u00eame, il est permis de mettre du sel dans une salade de concombres ou de radis que l\u2019on pr\u00e9pare en vue du repas proche\u00a0: d\u00e8s lors qu\u2019on y ajoute de l\u2019huile et des \u00e9pices qui att\u00e9nuent l\u2019effet du sel, il est manifeste que l\u2019on n\u2019en fait pas des salaisons (<em>Tour\u00e9 Zahav<\/em> 321, 1, <em>Michna Beroura<\/em> 14). Il est \u00e9galement permis de mettre du sel, sans avoir \u00e0 observer les susdites limitations, sur des l\u00e9gumes ou des fruits dont il n\u2019est pas d\u2019usage de faire des salaisons, par exemple des tomates (<em>Chemirat Chabbat Kehilkhata<\/em> 11, 2).<\/p>\n<p>Nos sages ont \u00e9galement interdit ce qui <em>ressemble<\/em> \u00e0 la mise en conserve d\u2019aliments. Ils ont donc interdit de pr\u00e9parer une grande quantit\u00e9 d\u2019eau sal\u00e9e ou de quelque autre liquide dans lequel on a l\u2019usage de mettre les aliments en conserve. Il est en revanche permis d\u2019en pr\u00e9parer la quantit\u00e9 n\u00e9cessaire pour y tremper des aliments au cours d\u2019un seul repas. Mais il est interdit de pr\u00e9parer, m\u00eame en petite quantit\u00e9, une eau sal\u00e9e concentr\u00e9e, o\u00f9 la proportion de sel est des deux tiers, car cela ressemblerait au fait de pr\u00e9parer une saumure pour conserver du poisson (<em>Choul\u2019han \u2018Aroukh<\/em> 321, 2).<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Nos sages ont interdit de mettre en conserve des cornichons, des olives et d\u2019autres produits du m\u00eame genre, dans de l\u2019eau sal\u00e9e ou du vinaigre, car la mise en conserve ressemble \u00e0 la cuisson.
